These were not anecdotal stories; they were statistically significant and led to countless systemic, chronic ailments being cured, including some of the most common chronic killers. So when weighing out the science, I can either trust data like that or I can trust some bought and paid for study about cholesterol, correlations, salt, and high blood pressure. Respectfully, I think you should at least consider the diet and the corruption within many of the widely debunked studies that you yourself have spoken about. Because people are going to look at those studies, and their own personal health inventory, and determine that low carbohydrate diets seem to make everybody, including them, a lot healthier. If there are studies leading to what you’re saying that are not bought and paid for by people, some of which have been proven corrupt, then please post them. Post the long term studies on ketosis, which essentially do not exist. Maybe the reason is because they don’t contribute to the trillions of dollars in healthcare costs that carbohydrate based diets do.
As for the Neu5Gc theory, saying red meat or dairy cause cancer because Neu5Gc is found in some cancer tissues is like saying most people who have heart attacks have eyeballs, therefore eyeballs cause heart attacks. The molecule exists in healthy tissue too, and its mere presence in cancer does not prove causation, only correlation.
