my greatest fear came true, turns out those home pizza ovens are amazing and you can have excellent pizza whenever you want

Seems to me the key to great pizza is a lot less in the specific dough recipe and a lot more about managing the oven temp and cooking process
Yes I want to experiment more with longer fermentation and sourdough, but I was impatient to try the new oven. Really impressed with how it turned out even with a quick version

So good. I spent a few HOURS making these at a friend's house on the river recently. We just hung out, tossed in random ingredients and cranked out mini pizzas all night for 30+ people. They were never "pretty" but all were infinitely better than most restaurant pizzas.
no kidding after your 20th or so pie once you really start feeling the groove it feels like processing an infinity stone.
cooked up 14 pizzas at my birthday party last year in an hour or so and it was one of the best days of my life
