transcription error theory seems pretty unlikely. Vigenere ciphers are basically keyed caesar ciphers, where you transpose letters based on a key (in this instance, YELLOW). I noted that the patches of seemingly correct text don't match 6-letter patches
doing a little manual caesar solving, it looks like wifies incorrectly transcribed a D as an O. this would make sense as the minecraft font is hard to capture details in similar letters and it's viewed at an angle.
BENEATH, ANCIENT ECHOS OF, TRUTH, all make it seem like this is nearly cracked already. but the text wifies gave us didn't actually show BENEATH, it showed MENEATH.
Feeding that into a Vigenere solver, I realized that it looks almost like plain text when decrpyted with the code YELLOW. that's a strong indicator this is almost solved already, since that's a whole word key and the text looks near legible.
after fucking around with various cipher solvers, i realized that after a +4 caesar rotation, it becomes:
